Gluten free maple glazed chicken
A week before my hubby’s birthday I decided to cook something special him. I was inspired by Pioneer Woman on this one. I must admit that I changed up the recipe and added my own touch.
Ingredients
Chicken:
5-6 chicken breast pieces
4 cloves garlic
2 tablespoons crushed chillies
1 tablespoon of black pepper
Salt to taste
10-12 Wooden skewers
Sauce:
1/2 cup Pure Maple Syrup
1/4 cup Gluten free Soy Sauce
1/4 cup Pineapple Juice
Steps:
1) Cut the chicken pieces in cubes wash and drain. Add the garlic, crushed chillies, black pepper and salt to the chicken and mix up. Thread all the chicken pieces into the skewers and leave to marinate in the fridge for 1-2 hours before cooking.
2) For the sauce combine maple syrup, soy sauce and pineapple juice into a pan and bring to boil. Let it boil for 5-7 minutes and set aside to cool.
3) Cook the chicken on a griddle to get the best taste and bbq grill effect. Let the chicken cook on medium heat, once cooked spread the sauce evenly with a brush.
4) Chicken is ready to eat. Make a side salad and some garlic bread to enjoy this dish.
